Two sets of contacts in the motor switch. One set of contacts is for the start winding. One set of contacts is for the heating element.
As the motor starts running the contacts for the start winding opens and the contacts for the heating element closes.

Yeah, the centrifugal switch allows the motor to complete its own circuit so that when you let loose of the start switch the motor will keep running.Since its not doing that it only runs if you hold the start button down.
