How do you change the defrost heater without damaging the evaporator?

You disconnect power, Then remove the 2 wire leads. Then bend back the tabs holding the heater and take it out.
Reverse the procedure to install the new heater.
For what it is worth,did you test the heater?
They rarely fail.
Usually the defrost thermostat or the defrost timer.
