amc2312 freezer thermostat cut in cut out

have a 10 year or older chest freezer made by the otasco inc they are no longer in business.
the temp thermostat was shorted out i replaced it with a upright freezer thermostat the problem is that the settings for the cut in and cut out set screws are off when the freezer reaches temp the compressor tries to come back on to soon i here a clicking noise from the compressor relay not sure how to adjust them Ive researched the web couldn't find any reference to this subject

How soon is to soon ... how long before the compressor tried to come back on?  do you have access to the pressures on the low side and high side...

I would think the cut-in and cut-out would be about the same whether it's chest or upright.  If it's really short cycling, it's probably a defective thermostat.  If you want to try adjusting, move both the cut-in and cut-out screws a little at a time until the short cycling stops.  Check the temperature with the thermostat dead center, it should be about 0°F.   Adjust the cut-out up if the temperature is too low,  adjust the cut-in down if it's too high.
