Amana Fridge evap fan not spinning

well when you have an evap fan that doesn't turn on until the thermostat closes then the thermostat needs to be on its GAME lol.  The thermostat I had in there wasn't closing for 3 or 4 hours after the coils got cold.  the new thermostat I put on there had a 3 or 4 minute delay then the fan kicked right on.  The ice water may have been the wrong way to go about it, but, it gave me the confidents I needed to pull the trigger on a new thermostat, lol.

What is the best way to check if the thermostat is closing properly?  If it has to be at 25 degrees or so in order for it to close, then how should I accomplish that without having to wait all day to see what it does?

3 or 4 minutes is about right.  I just start the fridge up and see if the coils start frosting. Put it back together.  Write up the bill and collect the money. I check it again before I leave. If the fan hasn't come on by then, I know I better open it up again.
