x336df Southbend Commercial Oven

I don't normally do commercial stuff, but a buddy of mines oven at his restaurant is acting up.

He had a grease fire in the oven and ever since then it won't heat past about 350.

I thought it would be the thermostat control, but the oven burner stays on.  It never gets hot enough for the tstat to turn it off.

I cleaned the burner and the orifice going into it.  they were both clean.

Is it possible that the heat somehow screwed up the gas valve so that it is not letting enough gas in?

The oven burner flame looks small to me.  They said it used to get up to 450 really quick, now it takes and hour to get to 350.

any ideas?

Did you remove the orifice to clean it?

You have a pressure problem through the gas valve.
Use a manometer to check your w.c. inches.
3.5 for Nat.,11 for LP.
Check input and output.
Take a Kid fishing.

I don't have a pressure meter.  would it be safe to assume its the oven gas valve since the stove burners on top are working fine?

Starting on page 25 of the following manual the flames must be carefully adjusted for propah oven performance: 336 models service manual provided by the fine folks at partstown.com

Get the part number off the valve and order it that way.
It does not have to come from Southbend.
Most of those valves are about $225.

Isn't t a standard ts11 Robertshaw safety? Has a pilot line and thermocouple going to it? If that is the case it seems the thermostat is the problem. If you remove the 4 screws on the valve and remove the diaphragm,(for testing only)then you can test the flame. If it is still small bad thermostat. It is the same system they use in the 1930-1960 ranges. That is my specialty. You can get a rebuilt thermostat and or safety from Repco replacement parts in Texas for a lot less.
