Perlick 1002a-ul Older Perlick Kegerator Avg Temp too warm

Hi,
I bought an older Perlick Kegerator off craigslist recently.  The ideal draft beer tempature is between 36-38.  I put a glass of water in the kegerator and the average temp gets down to only about 42-43 which is too warm.  I did some trial and error type tests, the kegerator has no problem cooling the inside down to 35 and up near the cold air vent to 30 degrees.  The problem is the kegerator compressor just turns back on to cool everything down at 55?!
The kegerator isn't trying to restart itself and fails, it just wont turn back on until the thermostat hits 55/56ish.  I confirmed this by letting it cool down completely and waiting for it to turn off. I then opened the doors on the machine and waited about 45 seconds for it to hit 55/56 and it immediately turned back on.  So it appears to cool just fine, it just doesn't want to turn on until the temp gets too high leaving the average tempature too high.

So my question is, whats the problem? Is it salvageable?  Is there a way to adjust the thermostat or something?

On the cold control their MIGHT be a couple of screws with cut IN and cut OUT marked on them that you can tweak. you might want the cut in time be a tad quicker.

All I have is a screw that I can turn that goes from warmest 5 4 3 2 1 normal 1 2 3 4 5 coldest.  Dont see anything else I can manipulate.  I have tried both extreme settings to confirm that I am on the cold setting side of things

Seems the general consensus is the thermostat is having problems.

I did some more digging myself and found this.  Perlick has a warranty/serial number lookup.  So I typed it in and it gave me a lot more info on things.  Seems its older then I expected.

You can use a generic 36-42 degree cold control.

Anyone in particular you recommend?  I went ahead and pulled the thermostat out.  It looks like it just has 2 inputs you plug the wire onto (slide it over the metal things on the thermostat) and then maybe a longer metal ground wire.

Is that an ambient air control or does the probe have to be connected to the evap plate?

The metal thing is not a ground wire,it is the sensing device for the thermostat.
