Talk about a piece of work..This is the mutha of all ice machines on the market. The way it works is a 4 sheets of ices are produced at a time over a waterfall of water pouring down on the plates. As the ice forms to the desired thickness a timer takes over and stops the ice making process. It kicks in hot gas from the condenser via a solenoid and floods the plates with heat. This releases the ice into the bin below. The Ice harvesting process starts again. Mostly the plates will get dirty and need to be cleaned with a product called nickle guard. Fastenating ain't it

  This method has not been used for years.Nowadays harvest is determined by a float switch. As the water level decreases to a predetermined level, harvest is initiated. This is similar to "Hoshizaki".

Actually Ice O Matic machines use a similar system. Once the freeze timer has timed out the machine enters in harvest mode (purge, hot gas and harvest motor are activated) until the ice drops to the bin and the cam switch is reset and the curtain switch is toggled.
This control scheme is great, IOM actually switched to electronic controllers years ago but and had to switch back to electromechanical controls because people complained that the electronics were hard to troubleshoot.
If you want to see the mother look around for Vogt tubular Ice machines with a Carrier open drive compressor ....

My appliance parts store was located right behind Crystal ice in Mobile. A natural well runs below the production plant. It is the mutha of the ice production in Mobile and my friend Wade Orso is the plant maintenance guy. He is a stickler for perfection. You should see it. Sweet operation.

That seems to be a nice procedure for that ice machine. I am using a Manitowoc Ice Machine for few months now, and I found myself satisfied with it. I just think that it is one of the best ice machines that I've ever had.
