 :) The machine will run in the freeze mode until the thickness probe (thermostat) has made contact with the ice. After a slight delay it actuates the harvest relay, which in turn activates the "hot gas solenoid". The compressor is running all the time (freeze, hot gas defrost). The hot gas valve causes the hot gasto be diverted away from the condenser and sent to the evaporator. This causes the ice to loosen and fall into the bin.
This is why you hear a hissing sound. After a predetermined time, the machine switches back into freeze mode and begins another cycle.

If the machine shuts off after harvest, you need to check your bin switch.
Premature harvest is usually a defective ice thickness control.
The fact that it does it on a 1:55 time leads me to ice thickness for the premature harvest.

Does this machine have a printed circuit board or good old reliable switches?

Well i just replaced one of the 2 fan motors of the machine.
The machine is running fine now for 2 hours already,i will see if the problem comes back.
One of the fan was slower than the other one so i replaced it.
seems to work now O0

Hope that works for you.
90% of ice machine problems are water or air related.
If the problem reoccurs check the harvest relay in the control box for corrosion or faulty contacts.
You stuck with it and found a problem.
Too many techs want to go in for a quick fix and start making adjustments or change parts unnecessarily.

I always start my I/M diagnostics by making sure the adjustments are set to factory specs if it is a machine I am not familiar with.
Secondly, I check air flow,leaky water valve and evaporator plate for buildup.
Always do a ice production checklist regardless of the brand of machine. Lots of external problems will mimic internal parts.
Some times the biggest problem has the easiest fix.

I just looked at your video. That machine does not have a printed circuit board. Sorry I asked in the other post.

If it is the machine I am thinking about it has a harvest thermostat in the top left corner of the e-coil. It should be enclosed in a sheath to help protect from pre-mature harvest. Also the wires need to be pulled up and secure.
