To give you an update, the stove has been working just great.  I put a thermometer in it to validate the temp and it has been doing that very well.

I need a little more advice.  Occasionally we smell gas.  Now this is an old stove and I did not change any of the lines.  What would be your advice to try locating the apparent leak? 

One more thing, my pilot light goes out occasionally as well or sometimes the flame will come to the burner but not light the burner.  Suggestions?

Sounds like your pilot burner may need to be cleaned.

Or the air/gas is not adjusted properly. Try adjusting the air shutter down a bit, that may get it to light faster.

When you refer to the air shutter, I am assuming you are referring to the adjustable opening in the burner that allows air to enter.  If so, then I would make this opening smaller. 

What about detecting a gas leak?  What is the best way to do this?

Stoveguy, many years ago we used to disassemble surface burner gas valves. They used a special gas valve grease, do you know where to get it? It would solve surface burner valves seeping gas.
